Peanut Butter Cups
Keli's recipe

1 C confectioners sugar
1 C creamy peanut butter
1/2 C packed brown sugar
2 T butter, softened
1 t vanilla extract
2 C (12 oz) semisweet chocolate chipos
1/4 C shortening
little foil muffin cups

In a bowl, mix the sugars, peanut butter, butter and vanilla. Cover and set aside.

In a microwave safe bowl, melt the chocolae chips and shortening. Pour teaspoonfuls of the chocolate mixture into 2 in foil muffin cups Drop a rounded teaspoon of the peanut butter mixture into each cup; top each with 2 teaspoons of the chocolate mixture. Refrigerate until set. Store in an airtight container.

Makes 3 dozen.

TIPS - try different peanut butter mixtures. There's nutella out there and some peanut butter and dark chocolate mixtures I've seen.
